A traditional Basque barbecue centers around the txuleton, a thick-cut, aged ribeye grilled over wood coals. The emphasis on high-quality, simply prepared ingredients mirrors Basque culture's respect for traditional preparations and sustainable ingredients. This is elevated dining shared in the most authentically casual way from a chef who grew up on a farm in the Basque Country, where the outdoors are everything and the best cooking happens when you are Mother Nature's sous chef.


The team bings grill(s) that are assembled on site; by setting up wood-fire grills next to the dining area, the atmosphere is interactive and convivial, with guests naturally gathering around the fire. This setup makes family-style dining feel effortless and organic, turning the meal into a shared experience.

Even more importantly, the idea that she is her own chef. Good ingredients, simply prepared and eaten right where they are grown. Basqueria was born from this union, this “way to be”.


I am Sebastien Pourrat, founder and chef from the Basque Country. Our concept is to prepare the very best food in a casual setting. We have a specialty of “open fire” cooking. When delicious food meets purposeful entertainment.
