This private dining masterpiece is a six-course tasting menu sourced from local Colorado producers and growers. With constantly changing seasons and extreme terrain, these plates are designed to elicit a taste of Colorado, showcasing the variety of flavors and textures of the Colorado alpine.


The dining experience includes table decor (table runners, candles, and floral arrangements), seasonal 'welcome drink' infusions (non-alcoholic) from fruits, herbs, and teas grown locally in Colorado, plus a variety of chef-curated snacks to begin your meal. Our team handles all cleanup.

Colorado Alpine: Chili Colorado Short Rib

Begin with Grains de Plains (millet, Hakurei turnip, honeyed rainbow chard, goat chevre) following by an appetizer course of Argentina shrimp ceviche with cauliflower and potato tostones, and a soup course featuring a Colorado twist on ramen with Tantanmen broth. The main course — Chili Colorado short rib — is a decadent mix of tender short ribs with fermented potatoes and beet leaf chimichurri. Save room for a dessert course and petit four to celebrate this incredible meal.

Colorado Alpine: Brisket

Enjoy the same menu as above but with an entree of slow-cooked brisket with potatoes, snow pea curtido and a Piñon mole sauce. Spectacular!

Colorado Alpine: Brook Trout

Calling all seafood lovers. Enjoy the same menu as above but with an entree of Colorado brook trout served with cauliflower, burnt leek alcaparrado, and coconut Mojo Isleño (tomato and onion) sauce.

Colorado Alpine: Goat Pernil

Enjoy the same menu as above but with succulent, slow-roasted (for 24 hours!) goat with Valley potatoes, radish escabeche, black garlic adobo, and fermented carrots.
