This is private dining at its most elevated best: a ten-course tasting menu blending local, seasonal Colorado ingredients with Latin flavors from Chef Steven Anthony of Puerto Rican. Begin your meal with various delicious small plates including an amuse bouche, fish and meat courses, and a decadent dessert. This is the perfect way to enjoy a variety of textures and flavors curated by Chef Rodriguez. Note that this menu can be prepared gluten-free and soy-free, just let us know in the "Notes" section when reserving.

10-Course Tasting Menu

Start with Chef's selection of small plates highlighting the season's finest ingredients. Followed by a slow cooked chicken breast served with a fun play off of a pumpkin seed hummus; next, we go into the front range plains with a millet & turnip salad; soup is a lovely ramen inspired by a Chinese-Japanese noodle dish, completely designed from local colorado ingredients; from there, a shrimp ceviche made with a tigers milk of local fruit; lamb shoulder with landrace corn grits & fermented gypsy-pepper hollandaise; dry-cured beef brisket with a truly unique Colorado mole; and a dessert featuring a reimagined s'more with pumpkin gelato, anise-flavored short cookies and a coquito (puerto rican eggnog) hot chocolate!

Chef Steven has partnered up with a local mixologist who crafts delicious, locally inspired-cocktails for your party. The drinks are a wonderful way to liven up your event and are created from a variety of spirits produced locally in Colorado.
