Full Biography

✧ Early Career Highlights:

In 1997, Hergatt became Chef de Cuisine at The Dining Room at The Ritz-Carlton, Sydney. He received critical acclaim, earning the title of “Best Young Chef.” He later moved to The Ritz-Carlton in New York City’s Central Park, where the restaurant earned three stars from The New York Times and a James Beard nomination for “Best New Restaurant.”

✧ Miami Success:

As Executive Chef at The Setai in Miami, Hergatt led the restaurant to achieve three stars, recognition as Esquire’s “Best New Restaurant,” and placement on Conde Nast Traveler’s “Gold List” in 2008 and 2009.

Return to New York:

In 2009, Hergatt opened SHO Shaun Hergatt in Manhattan’s Financial District. The restaurant received two Michelin stars, a near-perfect Zagat rating of 29/30, and accolades from Esquire and New York Magazine. Later, he launched Juni, a fine dining restaurant that also earned a Michelin star.

✧ Current Venture:

In October 2020, Hergatt opened Vestry in SoHo, returning to the New York City restaurant scene as Executive Chef and Owner. The American restaurant, known for its seasonally driven dishes, quickly garnered critical acclaim and a Michelin star.
